Evan Fraser, director of Arrell Food Institute, shares his thoughts on what the COVID-19 pandemic means for Canada’s food system. He talks about a supply chain shift (from restaurants/arenas/airlines to grocery stores), rethinking Canada’s food processing industry (more local processors?), and whether or not the temporary foreign worker delay will force Canadian food producers to shift to automation and become less dependent on human labour.
